Simple Components

Simple Procedure

  1. With your hands, combine all ingredients except cheese.
  2. Shape into patties. One pound of beef makes about three good-size patties, or a smaller number of excellent-size patties, or a larger number of less-good-size patties.
  3. Preheat a skillet with cooking fat over a high flame. Use of a lid is recommended because the fat that renders off the beef will smoke even if your cooking fat doesn't.
  4. Grill patties in the skillet, about four minutes per side, longer if you like them well done, shorter if you like them rare.
  5. Add cheese with about one minute left to go on the second side. Use of a lid here is critical, otherwise the cheese won't melt too well.
  6. Let the burgers rest for a few minutes after removing from the heat.
