List of Ingredients
- Eight to ten plump roma tomatoes.
- One medium-size cucumber
- The flesh of one serrano pepper
- Salt
- Red wine vinegarOr sherry vinegar, if you have it.
- Extra virgin olive oil
Optionally: croutons or toast.
List of Instructions
- Blend tomatoes, cucumber, pepper, and a heavy splash of vinegar (about a tablespoon and a half) until just short of a purée.
- Stir in one to two tablespoons of extra virgin olive oil.
- Stir in a heavy pinch of salt (two teaspoons), salt further to taste.
- Serve chilled in bowls with spoons, optionally with croutons or toast.
