Ham Burger

"Sometimes you can remember everything about an old friend, down to minor details about his behaviour, but for the life of you you can't picture his face."

-Ryu Murakami

Q. Is this really a recipe for hamburgers?
A. Yes.

Simple Components

Simple Procedure

  1. With your hands, combine all ingredients.
  2. Shape into patties. One pound of beef makes about three good-size patties, or a smaller number of excellent-size patties, or a larger number of less-good-size patties.
  3. Preheat a skillet with cooking fat over a high flame. Use of a lid is recommended because the fat that renders off the beef will smoke even if your cooking fat doesn't.
  4. Grill patties in the skillet, about four minutes per side, longer if you like them well done, shorter if you like them rare.
  5. Let the burgers rest for a few minutes after removing from the heat.
