"Sometimes you can remember everything about an old friend, down to minor details about his behaviour, but for the life of you you can't picture his face."
-Ryu Murakami
Q. Is this really a recipe for hamburgers?
A. Yes.
Simple Components
- A pound of ground beef
- Two pinches of salt
- Three pinches of pepper
- Two tablespoons of your favorite salsa
- Cooking fat of your choice.
Simple Procedure
- With your hands, combine all ingredients.
- Shape into patties. One pound of beef makes about three good-size patties, or a smaller number of excellent-size patties, or a larger number of less-good-size patties.
- Preheat a skillet with cooking fat over a high flame. Use of a lid is recommended because the fat that renders off the beef will smoke even if your cooking fat doesn't.
- Grill patties in the skillet, about four minutes per side, longer if you like them well done, shorter if you like them rare.
- Let the burgers rest for a few minutes after removing from the heat.
