Meat Balls

“The interesting thing is why we're so desperate for this anesthetic against loneliness.”

-David Foster Wallace

Combine

Complete

  1. With your hands, combine all ingredients other than cooking fat.
  2. Shape into balls, approximately the size of golf balls.
  3. Preheat a skillet with cooking fat over a high flame. Use of a lid is recommended because the fat that renders off the beef will smoke even if your cooking fat doesn't.
  4. Grill, turning frequently to cook evenly, approximately 12 minutes.
  5. Remove from heat and let rest for two-three minutes before eating.
