Combine
- A pound of ground beef
- Three heavy pinches of salt
- Three heavy pinches of ground black pepper
- Two heavy pinches of cayenne pepper
- One pinch of cumin
- One pinch of turmeric
- One pinch of smoked paprika
- One garlic clove, minced
- One hen's egg, beaten
- One half cup of breadcrumbs
- Cooking fat of your choice.
Complete
- With your hands, combine all ingredients other than cooking fat.
- Shape into balls, approximately the size of golf balls.
- Preheat a skillet with cooking fat over a high flame. Use of a lid is recommended because the fat that renders off the beef will smoke even if your cooking fat doesn't.
- Grill, turning frequently to cook evenly, approximately 12 minutes.
- Remove from heat and let rest for two-three minutes before eating.
