Prepare
- Six thick strips of bacon,Or a greater number of pitiful strips of bacon chopped into bite-size pieces.
- Four good-sized hen's eggs
- A half ounce of cheddar or emmentaler, grated
- A half ounce of parmesan or asiago, grated
- About two ounces of spinach leaves
- One garlic clove, minced
- A modest pinch of salt
- A hearty pinch of ground black pepper
- Cooking fat of your choice
Optionally: replace all cheeses with an ounce of feta.
Execute
- In the skillet, start to fry bacon over a medium-high flame.
- After about one minute of frying, add the minced garlic.
- While bacon is frying, crack eggs into the vessel of your choiceNever the skillet. and scramble with a fork or whisk.
- When bacon is half-finished frying, add spinach and modest pinch of salt to the skillet. Stir to cook down spinach.
- Add eggs, cheese, pepper to skillet. Optionally, Do not execute Step 2 and crack eggs directly into the skillet at this time. Reduce flame to medium-low after the eggs are in.
- Rapidly scramble the ingredients in the pan. Should take just a minute or two.
- Remove from pan and eat.
