Gather
- Two pounds of dried black beans
- One pound of bacon, chopped
- One pound of calabacita, diced
- Three carrots, shredded or minced
- Three roma tomatoes, diced
- One red onion, diced
- One c. 10oz can of green chilesOr two c. 5oz cans.
- Two bell peppers, diced
- One jalapeño or serrano or habanero, dicedOptional.
- 8-10 garlic cloves
- 2 tsp Salt
- 2 tsp Black Pepper
- 2 tsp cumin
- 1 tsp smoked paprikaOptional.
Slow Burn

Rinse beans in salted water, then add to the cauldron.

Add all other ingredients to the cauldron, add water to cover.

Simmer for four hours over a low flame. Add additional salt and pepper to taste.

Serve with tortillas and cheese.
